Egg Fried Rice

Ingredients :

Cooked rice — 4 cups
Bowl of fined chopped/diced vegetables (Onion <optional>, Carrot,Beans,Cabbage,white part of spring onions) 
Sugar — a pinch
Rice Vinegar / vinegar — 1/4 tsp
Green chilly sauce –1/2 tsp
Light soya sauce —  1/2 tsp
Salt — to taste
White pepper powder — to taste
Oil — 1+1 +1 tsp
Garlic — 1 tsp, finely minced 
Spring onions — 2 tbsp ,finely chopped
Water — 1 tbsp  

For Scrambled eggs:

Egg — 2 nos.
Salt — a pinch 
Black pepper powder — a pinch 

Method :
  • First dice all the vegetables finely and make it ready. Whisk the eggs with salt n pepper in a bowl and keep it ready. Add soya sauce, oil, green chilli sauce, salt , pepper, sugar, vinegar ,water and mix everything in a small bowl and keep it ready.
  • Heat a wok in a heavy flame with a tsp of oil and cook/ scramble the eggs.Transfer the eggs to bowl once it’s done. In the same pan pour a tsp of oil & add the minced garlic n spring onions followed by the chopped vegetables. Cook for 2 to 3 minutes until it’s crunchy over med-high flame.
  • Pour the sauce mixture and stir for 30 secs. Now toss in the cooked rice and using a fork mix the rice with the sauce and veggie’s thoroughly( in a medium flame)  Finally add the scrambled eggs, the remaining spring onions and again give it a good toss .Keep the rice in a  very low flame for 30 secs n switch off. Serve hot with any ketchup / chilly chicken (and my next post is going to be Chilly chicken)
