Spinach – Egg Fry

A delicious healthy side dish good with Chapati and Puri

You will need

Spinach – 1 bunch

Eggs -2

Onion- 1, finely sliced

Crushed garlic- 1 tablespoon

Turmeric powder – 1/4 teaspoon

Chilli powder -1 / 2 teaspoon

Pepper powder – 1/2 teaspoon

Salt – to taste

Cooking oil – 1 teaspoon

Method

In a pan/ kadai , heat oil. Add finely sliced onion and garlic. Fry till get golden color. Add chopped spinach. Mix it well. Cover with a lid. Cook on a slow flame for 10 minutes / till done. Add eggs and mix it nicely. Add salt, turmeric powder, chilli powder and pepper powder. Cover with a lid for 5-8 minutes. Stir occasionally. Serve with Rice/ Chapati and dal.
